Servings 2 servings
Ingredients
- 113 g. (4 oz) Sip! Extraordinary Drinking Chocolate®, Peppermint flavor
- 60 g. (2 oz) Sugar
- 180 g. (6 oz) Half and half
- 300 g (10 oz) Crushed ice or nugget ice
- garnish with whipped cream, mini marshmallows, crushed peppermint candy
Method
- Place Sip! Extraordinary Drinking Chocolate® mix, sugar, and half and half into a medium sauce pan. A nonstick saucepan will help reduce sticking.
- Whisk constantly over medium heat until the mixture starts to simmer and bubbles pop on the surface. Remove from the heat and transfer the base to a small bowl.
- Blend the base with an immersion blender for 10 seconds until silky. Omit this step if you don’t have an immersion blender. Instead, whisk well. Cool over an ice bath. The base will look like pudding.
- Cover and refrigerate until ready to use. There should be 10 oz of base.
- Place the crushed ice in a small blender. Add the Sip! base and process until the mix has the consistency of a milkshake. Work quickly and don’t over process or the ice will melt.
- Divide the frozen hot chocolate into 2 tall glasses.
- Top with whipped cream, mini marshmallows, and crushed peppermint candy. Serve immediately with fat straws.
Notes
- Prepare the base in advance and refrigerate for up to 4 days or portion and freeze for up to 2 months. Thaw in the refrigerator before using.
- Substitute Milk Chocolate or Dark Chocolate flavored Sip! for the Peppermint flavor.
- For a dairy-free version, substitute an extra creamy milk or half and half alternative. Substitute a plant-based whipping cream for the whipped cream. Chef En-Ming recommends Califia Farms Oat Barista Blend Oatmilk and Califia Farms Heavy Whip Substitute.
- Crushed ice blends faster and more evenly. No crushed ice? Buy nugget ice from your local fast food restaurant.
- Work quickly and use a blender that processes ice easily so your drink doesn’t melt in the blender.
