Sip! Extraordinary Bourbon Pecan Pie

Classic pecan pie spiked with Dark Chocolate Sip! and bourbon.

Ingredients
  

  • 200 grams (1 cup) light brown sugar
  • 40 grams (1/3 cup) Sip! Extraordinary Drinking Chocolate®, Dark Chocolate flavor
  • 200 grams (4 each) eggs, room temperature
  • 300 grams (1 cup) light corn syrup
  • 50 grams (3 T + 1 t) unsalted butter melted
  • 5 grams (1 t) salt
  • 5 grams (1 t) vanilla extract
  • 60 grams (1/4 cup) bourbon
  • 200 grams (2 - 2/3 cup) chopped pecans, lightly toasted
  • 60 grams (1/3 cup) mini dark chocolate chips
  • 1 parbaked 9-inch pie crust

Method
 

  • Preheat oven to 350℉.
  • Mix the light brown sugar with the Sip! Extraordinary Drinking Chocolate® well. Set aside.
  • Whisk the eggs and blend in the light corn syrup, warm melted butter, salt, vanilla extract, and bourbon.
  • Whisk the light brown sugar mixture into the egg mixture. Mix well.
  • Evenly spread the chopped pecans and mini dark chocolate chips into the pie crust.
  • Pour the filling into the pie crust.
  • Bake the pie for 45 to 50 minutes until the center of the pie filling puffs up slightly and feels firm to the touch. Tent the pie with foil while baking if the surface starts to color too much. Cool the pie to room temperature before serving.
  • Serve with whipped cream or vanilla ice cream.
  • Refrigerate leftover pie for up to 3 days.

Notes

Chef En-Ming’s Pro Tip: Use a thermometer to test for doneness. The pie is ready when the center reaches 200℉.
