INSTRUCTIONS:

To prepare one serving of rich, creamy drinking chocolate, combine 4 oz. whole milk with 1 oz. of mix and follow one of the methods below. Amount of milk or mix may be adjusted according to taste. Low-fat milk, skim milk, or unsweetened non-dairy milk substitutes may be used in place of whole milk. Mix can also be prepared in a microwave or chilled.

To batch ahead, blend 5 lbs. of mix with 2.5 gallons of milk with an immersion blender for 1 minute. Cover and refrigerate for up to 4 days. Heat in a steam kettle whisking constantly to a simmer. Hold for service in an NSF-certified pump pot. For individual servings, prepare to order using the steam wand of an espresso machine.

CONVENTIONAL STOVETOP, STEAM KETTLE OR PASTEURIZER:

Combine milk with mix. Bring to a simmer over low to medium heat, whisking constantly. Use a heatproof spatula if needed to prevent sticking. Remove from heat and whisk or stir a few seconds before pouring into cup. 

MILK STEAMING NOZZLE:

Whisk the mix and milk together in steaming pitcher. Steam for 15 seconds. Remove from heat and whisk or stir a few seconds before portioning.

SIP! MILK CHOCOLATE INGREDIENTS:

Sugar, cocoa (processed with alkali), unsweetened chocolate, sweet cream solids, refiners syrup, cane molasses, modified cornstarch, vanilla.
